Coconut Flour is produced from fresh, organic coconut meat, which is dried, defatted and finely ground to produce the flour. It is a high-fiber, high protein, low fat, gluten free product. Coconut flour is cream colored with a slight nutty odor. The fatty acid content of coconut flour is mostly lauric (48.4%). Unlike wheat flour, coconut flour offers a good amount of essential amino acids.
